Abstract
In this study,broken round shaped rice is taken as the raw material,traditional alkali extraction and acid precipitation method is applied for rice protein extraction,and the rice protein extraction parameters are optimized.The optimal extraction conditions are obtained as following:NaOH concentration of 0.10 mol/L,ratio of solid to liquid of 1 ∶10,extraction temperature of 20 ℃,and extraction time of 5 h.Under these conditions,the extraction rate of rice protein from broken round shaped rice is 77.30%.
