Abstract
Rice is one of the most important food materials,and it is of great significance to extract and make use of rice protein.Extraction and preparation of rice protein from broken rice with alkali method are studied in this paper.Effects of stock-solvent ratio,extraction temperature and reaction times on rice protein extraction rate are investigated.By the single factor test and orthogonal experiment,the results show that the optimum conditions are as follows:stock-solvent ratio 1∶8,extraction pH value 11.5,extraction temperature 45 ℃,and extraction time 1.0 h,and extraction rate of rice protein reached 67%.
