Abstract
This paper investigated the characteristics of extra-cellular protease of Actinomucor elegans 3.27. The results showed that the system included acid, neutral and alkaline protease, among which the neutral protease was the most stable to temperature and acidity and the dominant protease in sufu ageing. The optimal temperature of protease activity was 55℃ and the correct concentration of NaCl (2%), CaCl2 (0.08%) and MgCl2 (0.08%) could make it active.
