Abstract
In this paper,the feature of protease producing by Mucor racemosus was investigated primarily by determining the activity of the protease.The study show that the protease was excreted during at 5th day to 6th day of the culture.And the optimum pH of the protease was at pH 4.0~6.0,the protease has a better stability at the pH4.0~6.0 also.And the optimum temperature of the protease was at 45℃~55 ℃,the protease has a better stability at low 40 ℃.And 1.0%NaCl,1.0%CaCl2,1.0%MnSO4,1.0%Mg2SO4 can active inhibit the protease activity,but 1.0%KCl,1.0%ZnSO4,1.0%CuSO4 can inhibit the protease activity.
