Abstract

The research determined enzyme activities of two proteases by Folin method,and studied the effects of pH,temperature and heat treatment on the enzyme activities.The results showed that the optimal pH of acid protease and neutral protease were 3.0 and 7.0,respectively.And their optimal temperature was about 60℃.The acid protease had higher thermal stability than neutral protease.
