Abstract
Enzyme hydrolysis technology was used in extracting polysaccharide extracted from garlic. On the basis of single factor experiment results and analysis, orthogonal test was used to determine the optimum extraction conditions of garlic polysaccharide, effects of papain amount, time, temperature, and pH on the garlic polysaccharide extraction were studied. The optimum extraction conditions from garlic polysaccharide were as follows: amount of papain 2 %, time 1.5 h, temperature 55 ℃, pH value 6, the optimal yield under the condition of the garlic polysaccharide was up to 5.51 %.
