Abstract

Effects of papain, cellulase and pectase on extraction rate of polysaccharide from Paecilomyce were determined in orthogonal test. The results showed that the polysaccharide content extracted by papain was the highest among three enzyme-extraction method, and its optimal extraction conditions were 1 % papain, 50 ℃ and pH 7, 2 h with papain treating.
