Abstract
The onion was used as the raw material,the extraction rate of polysaccharide was selected as the indicator,and the total sugar content of polysaccharide was determined by phenol-sulfuric acid method.The cellulase,papain and pectinase enzyme ratio of 18∶5∶10in the complex enzyme system was obtained by the orthogonal experiments.Then,the central composite design was adopted to optimize extraction technology.The results showed when the extraction temperature was 55℃,the extraction time was 120 min,pH was 5.0,the amount of enzyme was 0.4% and the ratio of solid-liquid was 1∶40(m/V),the extraction rate of polysaccharide reached 3.27% with the content of polysaccharide up to 50.5%.
