Abstract
In order to improve the added value of soybean dregs, soybean dregs were utilized to ferment Ganoderma lucidum(Curtis ∶Fr) P. Karst. Fermentation time、inoculum size、culture temperature and sucrose content on the effects of ganoderma lucidum mycelia growth and fermented bean curd polysaccharide content were studied by single factor experiment. The tech- nolgy conditions of fermentation were optimized by orthogonal test. Results showed that the optimum condition for red ganoder- ma lucidum fermentation bean dregs was cane sugar 1.0%, quantity of 10%, 10 d training time, culture temperature 30 ℃.
