Abstract

The effect of selenium applied at different levels on the growth of barely and accumulation of selenium was studied. The results were as follows: ① The barely possessed a great ability in selenium biological accumulation, and the contents of total selenium in treated barely were 10 μg·g-1, 60 times more than that of the control, and 90% of total selenium existed in organic matters as protein, nucleic acids and polysaccharides; ② Selenium increased the contents of protein and inhibited the respiratory intensity of barely, and the optimum concentration for increasing the contents of nucleic acids was 10 mg·L-1; ③ Selenium had antioxidation and increased the activity of peroxidase, polyphenoloxidase and glutathione peroxidase in malt.
