Abstract

[Objective] The rapid detection method of the bacterial count in flour was established.[Method] The bacterial count in flour was tested with optimal ATP bioluminescent method and the influence of the concentration of Ln,FL and Mg2+ on ATP bioluminescence response was studied.[Result] The results indicated that when the concentration of Ln was 70 mg/L;FL,50 mg/L and Mg2+,0.250 0 mmol/L,the determination result from the method was relatively perfect. The minimum of bacterial count(1.0×103 cfu/ml) could be detected with the method, which was correlated well with the method of conventional plate count(P0.05) and RSD was 4.0%,[Conclusion] This method was with characteristics of low cost, easy operation, fast response, accurate and reliable, which was capable for the rapid detection of bacterial count in food.
