Abstract
The pigments in Akebia trifoliata petals were extracted by solvent extraction method and their physic-chemical properties were analyzed. The result showed that, the best extraction conditions were as follows: 60% ethanol(V/V) as extraction solvent at 60 ℃ for1 h. The pigment showed bright orange-red in acidic environment, became brownish green in neutral and slightly alkaline environment.NaSO3, Vc and KMnO4 had hypochromic effect, while Sodium benzoate had hyperchromic effect, and EDTA and citric acid had no significant impact on the pigment. The pigment was stable to light and some metal ions including Ca2+, Mn2+, Zn2+, K+, Na+, Fe2+, Mg2+, Co2+,Al3+, Pb2+. Moreover, Cu2+、Sn2+and Fe3+affected the stability of the pigment.
