Comparative Study on Extraction Technologies of Anthocyan from Maize

Abstract

Purple maize cob as raw material,anthocyan was extracted by hot water extraction,ultrasonic-assisted extraction and microwave-assisted extraction.Results showed that optimized hot water extraction,direct acid hydrolysis method,ultrasonic-assisted extraction and microwave-assisted extraction gave anthocyan yields of 7.85%,12.11%,18.42% and 16.78%,respectively.Compared with conventional hot water extraction,other 2 methods had the benefits of safety,saving energy,rapidity,high productivity,and so on.
