Abstract
RAPIDASE INTENSE pectinase is used to improve both the juice yield rate and pigment yield rate of blueberry.The orthogonal experiments determine the optimal conditions for blueberry pigment extraction with ethanol soaking are: 70% ethanol solution as the extracting agent;30 ℃ extraction temperature;2 h extraction time;1∶10 solid-liquid ratio.Under the conditions the pigment yield is 4.8%.
