Abstract

The respiration rate and color and related enzyme activities of sweet cherry fruit by treated with high concentration of CO2 for different times(48,96,144h)were studied.The results showed that the polyphenol oxidase(PPO)activities of fruit by treated with high concentration of CO2 for different times were inhibited different degrees,especially the activities of PPO,POD and respiration rate were inhibited significantly and the content of malondialdehyde(MDA)reduced for short-term treatment with high concentration of CO2,the coloring process of pericarp was delayed,and it alleviated the browning of fruit and maintain a better storage quality post-storage.
