Abstract

Nitrosation reaction occer between indicatior(neutral red) and nitrite in hydrochloric acid medium.The production had a sensitive absorption peak at 351 nm,a simple ,fast and sensitive method is established to determinate nitrite in sausage by ultraviolet spectrophotometry,recovery is about 92.78%,average relative standard deviation is 0.67%.
