Abstract

Rapeseed proteins were prepared by alkali extraction and then acid precipitation.The proteins were extracted with alkali at pH 12,the ratio of solvent and rapeseed meal was 1∶15.Two step preciipitation process was used recover the rapeseed proteins,first at pH 6.0,then pH 3.6.The last step was drying process in which the preciptiated proteins were dispersed in water,then neutralized and dried with spray dryer.Under these conditions,the nitrogen recovery was 56.4%.
