Abstract
Rapeseed protein was prepared by alkali extraction and acid precipitation from double-low defatted rape-seed meal.The optimum conditions were established, which included alkaline of pH(pH= 11.0) .extracting temperature (50℃), extracting times (4), extracting time (35 min) and the ratio of rapeseed meal to solvent (1:12). Under the best conditions, the protein content of product is 86.12% and the yield is 24.35% .After phytic acid was removed by 8 times of water with pH 5.0 and tannin was removed by 4 times of 85% ethanol,double-low rapeseed protein isolate with low-phytic acid and low-tannin was prepared by alkali extraction and acid precipitation.
