Abstract
Cottonseed protein was stepwise hydrolyzed by two kinds of enzyme and the degree of hydrolysis(DH) was determined by pH-stat method.The reaction conditions and influence factors were researched.The results showed that cottonseed protein was first hydrolyzed by Alcalase under conditions as follows: enzyme dosage 750 U / g,temperature 60 ℃,substrate concentration 5%,pH 8,time 300 minutes.The hydrolysate was treated to exterminate the power of Alcalase,and then hydrolyzed by neutral protease AS1.398 under conditions as follows: enzyme dosage 8 000 U / g,temperature 60 ℃,pH 7,time 100 minutes.Under the optimal conditions the DH reached 20.08%.
