Abstract

Extraction technology of yellow pigment in maize paste was studied. The results showed that the optimum process was as follow: taking 95% alcohol as extract, the extraction time 2 h, solid-liquid ratio 1:8, temperature 75 ℃ and pH 7. The extraction rate was 0.331 mg/g.
