Abstract
The polysaccharides were extracted from rapeseed meal by water. On the basis of single factor experiment, the extraction of polysaccharides was optimized by response surface methodology with extraction temperature, extraction time and ratio of solid to liquid as factors and polysaccharides yield as indicator. The results showed that under the conditions of extraction temperature 80 ℃,extraction time 3. 4 h, ratio of solid to liquid 1∶ 34 and extraction times once, the polysaccharides yield was 2. 09%.
