Abstract
Polysaccharides was extracted from peanut meal by ultrasound-assisted aqueous extraction, and response surface methodology was used to optimize the extraction technics. The effects of four factors on extraction of polysaccharides were investigated. The result showed that the optimum extraction conditions were ultrasonic power 70 W,extraction time 24 min, extraction temperature 71℃,ratio of solvent to material 29∶1.Under these conditions, the yield of polysaccharides was 1.80%.
