Abstract
Through the single factor and orthogonal experiment,hydrolysis conditions of 2S and 12S protein from rapeseed by flavourzyme were investigated.The results showed that the optimum hydrolysis conditions of 2S were as follows: substrate concentration 1%,enzyme-substrate ratio(E/S) 95 LAPU/g,temperature 50℃,pH 7.0,hydrolysis time 3 h.Under these conditions the degree of hydrolysis was 33.64%.The optimum hydrolysis conditions of 12S were as follows: substrate concentration 1%,enzyme-substrate ratio(E/S) 85 LAPU/g,temperature 50℃,pH 6.6,hydrolysis time 3 h.Under these conditions the degree of hydrolysis was 19.97%.
