Abstract

Protamex proteinase and flavourzyme roteinase were used to hydrolyze beef at the same time.The optimum hydrolysis conditions was substrate concentration 16.0%,the dosage of protamex 1.0%,the dosage of flavourzyme 1.0%,temperature 50℃,pH6.5,hydrolysis time 8 hours,the test hydrolysis degree was 21.0% under these conditions.Satisfying content of low molecular weight peptides were found in the enzymolysis produces under the optimum hydrolysis conditions.
