Abstract

The effects of ethanol on the product of tomato by saponified and the affecting factors, such as extraction temperature, time, and solvent ration on extraction were reported in the present study. The best result was obtained by pretreatment of the saponification product of tomato with ethanol (95%) three times, and then extract of lycopene with 1∶5 ratio of raw material to dichloromethane for 45 minutes under 30℃.
