Abstract

The techniques of lycopene extraction from tomatoes,the factors affecting the extraction such as the pretreatment,volume of ethanol,time and pH were studied.The result shows that the pretreatment with 1.5g(NH4)2SO4,proper ethanol and the extraction of lycopene with 4mL ethanol for 20 min under pH9 could obtain the best results.
