Abstract
The taxes from Huainan and Huaibei salt industry in the Qing Dynasty was of great importance for the whole country. Huainan and Huaibei salt merchants were very rich. Their capitals were partly spent on their own luxuries. So their spending on food influenced Yangzhou food greatly. Salt merchants in the Qing Dynasty contributed a lot to Yangzhou food culture.
