Abstract
A method to determine fatty acids in fish egg was described in the paper.Fat was extracted with CM method,esterified with ester exchange method of potassium hydroxide-methanol solution at room temperature and analyzed by FFAP capillary columm gas chromatography.Dominant fatty acids were also identified in fish egg.Average recovery of fatty acid reached 90.78~102.45%,relative standard deviation was in the range of 0.0439~0.0661 and lowest detection limit ranged from 0.248 to 0765μg/g.If the gas chromatography conditions was optimized,the method could be used to determine different animal fatty acids.
