Abstract
The growth rate and acid production ability of bifidobacterium INf and lactobacillus acidophilus PB1 in both pure culture and mixed culture conditions were compared,to determine the growth characteristics of bifidobacterium and lactobacillus acidophilus in soymilk in pure culture condition,and to discuss the microecological relationship of the two kinds of probiotics in mixed culture condition.Results showed that,in culture medium of soymilk,there were some advantages of mixed culture of bifidobacterium and lactobacillus acidophilus,and they could be applied in the production of fermenting soymilk.
