Effect of Cultivation Substrate C:N Ratio on the Nutritional Value of Protein from Panus giganteus Fruit Bodies

Abstract

Protein from Panus giganteus fruit bodies cultivated using substrates with different C:N ratios was assessed in terms of essential amino acid content and six nutritional quality indices--Amino Acid Score (AAS),Chemical Score (CS),Essential Amino Acid Index (EAAI),Biological Value (BV),Nutritional Index (NI) and Amino Acid Ratio Coefficient Score (A.ARCS).The highest content of essential amino acids was recorded in protein from fruit bodies cultivated using substrateⅢwith a C:N ratio of 35:1.Protein from fruit bodies cultivated using substrateⅠ(C:N ratio 25:1) had a superior nutritional value,and was ranked highest in terms of three protein quality indices (CS,AARCS and NI),second highest in the case of EAAI and BV,and had the third highest AAS.Protein from fruit bodies cultivated using substrateⅢ(C:N ratio 35:1) was ranked highest in terms of two indices (EAAI and BV) and second,third,fourth and seventh in the case of AAS,NI,CS and AARCS,respectively.
