Abstract

Tilapia waste was hydrolyzed with a commercial neutral protease preparation.Analysis of the experimental design and calculation of data were carried out using Statistical Analysis System,and hydrolysis conditions were investigated with response surface methodology(RSM).The optimum values for enzyme concentration,temperature and pH were found to be 0.56 %,53 ℃ and 7.1,respectively,and a degree of hydrolysis up to 36.2 % was obtained under this condition.
