Abstract

The crush blueberry was extracted three times using acidic ethanol as extracting agent.The extraction solution was vacuum concentrated to the relative density of 1.10.After spray drying,the red anthocyanidin powder was obtained.The result showed the procyanidin content ≥ 25.0%,the anthocyanin content ≥ 7.5% and the anthocyanidin content ≥ 5.0%.
