Abstract
The extraction of total saponins from bitter melon by ultrasonic wave was studied.The optimum extracting conditions of total saponins in bitter melon were as follows: the extracting temperature was 50 ℃;the ultrasonic power was 450 W;the extracting time was 40 minutes.It was found that the ultrasonic wave extraction compared with the water bath shaking extraction could decrease the extracting temperature and save the extracting time,but could not increase the extraction rate of saponins effectively.
