Abstract
Study the effects of temperature, time and ratio of tea to water on extracted rate, and determine the content of tea polysaccharide (TPS)and the content of protein in the tea extraction. Using extraction method, we optimized the extract conditions of temperature, heating time, ratio of tea to water firstly. Then we used orthogonal design method to obtain the optimal extracting conditions. And the correlation of the contents of tea polysaccharide and the contents of protein in the tea extraction was analyzed. The result indicated that the suitable temperature, time, and ratio of tea to water(RTW) was 55 ℃, 3 hours and 1:25 respectively. The first affecting factor on the extracted rate was heating time, and the second was ratio of tea to water. And the last was temperature. There was a positive correlation between the content of tea polysaccharide and the content of protein in the tea extraction. The suitable temperature, time, and ratio of tea to water(RTW) was 55 ℃, 3 h and 1:25 respectively.
