Pretective Effects of Trehalose and Hyaluronic Acid on Lactobacillus acidophilus

Abstract

This thesis evaluates the protective effects of trehalose,hyaluronic acid(HA) and their combination on Lactobacillus acidophilus.Therefore it chooses the optimal protectants matches of lyophilized Lactobacillus acidophilus.According to the changes of livability,growth and acid-production capacity of Lactobacillus acidophilus,it is found that trehalose,HA and their combination show the main protective effects on Lactobacillus acidophilus during lyophilization.A stronger protection of activity in freeze-dried Lactobacillus acidophilus is obtained when trehalose and HA used together than each agent used alone.The optimal protectants matches of lyophilized cells are chosen via orthogonal tests,and the livability of Lactobacillus acidophilus is 55.2 %.
