Abstract
The nitrate contamination of main vegetables in suburbs of Harbin was investigated and evaluated with the standards convered from the maximum daily nitrate intake threshold issued by WHO / FAO.The results showed that the contents of nitrate in vegetables varied significantly with different kinds of vegetables,i.e,leafroot vegetablespeking cabbagelegumesegg plantsgourds.The differences in nitrate accumulation occurred among species.Cultivars and parts of some vegetables were highly significant.The quantity of accumulated nitrate in different parts of vegetables show as follows: rootstemleaffruits.The differences of nitrate contents occurred different parts of vegetable.
