Abstract

To study enzymatic hydrolysis conditions in honeybee, papain was used to study the effects of temperature, time, enzyme amount, pH value and solid-liquid ratio on hydrolysis with orthogonal experiment. The results showed that the optimal conditions is temperature 50 ℃,3 h,pH 6.5,enzyme amount 2.4%, solid-liquid ratio 1∶3.
