Abstract

The neutral protease and the papain were used to hydrolyze the low-price fish protein and study the process condition of enzymatic hydrolysis. The effects of dosage of enzyme, concentration of substrate, temperature of enzymatic hydrolysis, pH value etc were analyzed. The results showed that it was better to add neutral protease at first than to add the papain at first. The optimal conditions were the ratio of the neutral protease and the papain of 5∶1, the time of hydrolysis of 6 h,the concentration of substrate(m / V) of 1∶10, the temperature of enzymolysis of 55 ℃, pH 7.0. Under which, the hydrolysis could be 35.85%.
