Abstract
The best technological condition of digesting Meretrix meretrix was determined by method of orthogonal experiment. The result showed that the best effect of enzyme was in the condition of 50℃, 2% of trypsin, pH8.0~8.5, and 8 hours for digestion. We discovered that the content of amino acid was more overall at 50℃ by TLC. The amino acid analyzer showed that the content of amino acid in extracting solution was more than that in hot water.
