Abstract

The optimum extraction technology of lycopene from tomato was studied by using the orthogonal design.The results showed that more than 85% of extraction rate could be reached under the conditions of 45℃,3∶1(ethyl acetate∶tomato ketchup),35 min of extraction time and 3 extraction times.
