Abstract

The components and chain length distribution of resistant starch granules RS2 in a high quality indica rice Basmati 370 and a high quality japanica rice Koshihikari were studied. The RS2 components of the two varieties were mostly amylose,and the results analyzed by the Size Exclusion Chromatography (SEC) indicated that the amylose included not only the amylose linear chains but also the branched amylose chains and the long chains of amylopectin. Analysis on chain length distribution of RS2 branched chains showed that for both the two varieties,the proportion of long chains(Degree of polymerization36) were more than 26%.
