For biological as well as technological reasons a greater knowledge of the relation of breed of cattle to the production of the major proteins of milk is important.The milk from five to seven cows from each of five major breeds was used for electrophoretic analysis.The amounts of a-, /?-and ,/casein, a-lactalbumin, B-lactoglobulin, the immune globulins, and serum albumin present in each milk were determined.Editor.
