Abstract

The effects of slaughter weight on carcass performance and meat qualities of Lunong Synthetic Line No.Ⅱ finishing pigs were studied.The results showed that the effects of slaughter weight on carcass weight,left carcass weight and Bond percentage of Lunong Synthetic Line No.Ⅱ finishing pigs were extremely significantly different.The effects on average fatback thickness,ham weight and skin and fat percentage were significantly different.Average fatback thickness and skin and fat percentage of 102-106 kg weight stage were higher,increased by 11.86 %(P0.05)and 9.68 %(P0.05) as compared with 94-100 kg weight stage.Eye muscle area,ham percentage,Lean percentage and bond percentage of 94-100 kg weight were higher,increased by 1.43 %,3.36 %,2.43 % and 11.13 %(P0.01)as compared with 102-106 kg weight.The effects of slaughter weight on meat color score,a value and IMF were significant difference.Meat color score,marbling score,pH value,a value,IMF and dry matter of 102-106 kg weight stage were higher,increased by 3.88 %(P0.05),22.68 %(P0.05),2.17 %,5.21 %(P0.05),31.42 %(P0.05) and 1.16 % as compared with 94-100kg weight.The effects of slaughter weight on longissimus muscle amino acid contents and fatty acid contents were not significantly different.
