Abstract
Carcass performance and meat quality of 28 Lunong synthetic line No.2 finishing pigs of 94~108 kg body weight stage were studied.And the changing rule and the relativity between dressed carcass,meat quality and body weight were analyzed.The objective was to investigate the appropriate slaughter body weight of Lunong synthetic line No.2 finishing pigs suitable to the market,results indicated that lean percent at the stage of 98~100 kg slaughter weight was higher than that in others stages,which was 61.63%,increased by 0.75%(P0.05),2.32%(P0.05)and 3.37%(P0.05)as compared with the other three groups,respectively.When the slaughter weight was 102~104 kg,the meat quality was fine,pH was 6.10,meat color and marbling score were 3.14 and 3.50,intramuscular fat content of muscles was 3.21%,water loss was15.95%.The correlation degrees of carcass traits to meat traits were strong or weakness,the correlation coefficients were positive or negative.The same traits had strong positive correlation,the adverse traits had strong negative correlation. In the 94~108 kg body weight stage,except that between carcass weight,average fatback thickness,bond percentage,marbling score,IMF,crude protein and the body weight there were extremely remarkable or remarkable return relations,there was no remarkable linear correlation between other indexes and the body weight.The generalized analysis test results believed that the reasonable slaughter weight stage of Lunong synthetic line No.2 finishing pigs was 100~104 kg.
