Abstract

The liquid-state fermentation media for Monascus pigment production by Monascus purpureus JR were optimized,and the results showed that glucose,peptone,magnesium sulfate,zinc sulfate and manganese sulfate were the favorable medium components for the biosynthesis of Monascus pigment.Based on this fact,the effects of the above components on the biosynthesis of Monascus pigment were further researched with the method of rotational quadratic orthogonal experiment design.As a result,the preferable fermentation medium for Monascus purpureus JR fermentation was as follows(g/L): glucose 33.18,peptone 13.36,MgSO4 0.66,MnSO4 0.1,ZnSO4 0.1.The final Monascus pigment content under this fermentation medium reached 203.4 U/mL,which was 39.70% higher than that obtained with the original medium recipe(glucose 50 g/L,peptone 10 g/L,MgSO4 1.0 g/L,MnSO4 0.1 g/L,ZnSO4 0.1 g/L).
