Abstract
The production sheet has a two-fold purpose: it serves as a daily work guide for employees and assists the managers in their menu predictions. The production sheet or schedule serves as the work sheet for the day and is the best way for the manager to communicate to every employee exactly what he/she expects for this particular day. However, if a cook grills 25 more sandwiches than stated on the production sheet and has 30 sandwiches left over, it is the cook’s responsibility that the food and labor have been wasted. From past production sheets, the manager knows how many clients will stay in the facility for a particular weekend or holiday and can adjust production accordingly. The menu can be changed for control items at these times to avoid overproduction. If the production sheet has been properly filled in the previous day, the manager can easily tell what the leftovers are and where they are stored.
