Abstract
Ethanol was employed as extracting agent to perform the ultrasonic-assisted extraction of polyphenol from prosomillet pericarp. The antioxidant activity of polyphenol was evaluated by DPPH·and·OH scavenging method. The results showed that the Polyphenol content of prosomillet pericarp was 9.85 mg/g, and the scaveng-ing ability also antioxidant activity to DPPH· and ·OH was significantly strong. Moreover, there were obvious dose-effect relationships between scavenging ability and the concentration of polyphenol.
