Abstract
Chestnut (Castanea sativa Mill.) is a fruit traditionally appreciated in European countries, which has been studied and exploited industrially as an ingredient in foods with functional properties. It is well known as a starch source for other products and studied as an antioxidant, prebiotic, and ingredient in gluten-free products. The proximate composition and functional properties are important topics for the design of functional foods that can contribute to the strengthening of the productive chain of chestnut.
