Abstract
Soybean meal was replaced by some alfalfa meal decompounded by papain,effect about the rate of protein hydrolysis with the amount of enzyme,hydrolysis temperature,hydrolysis time was Studied. The amount of 0.02 g for the 10-hour hydrolysis time,hydrolysis temperature of 65 ℃ were the best conditions for enzyme digestion,the best hydrolysising technics that soybean meal protein were replaced by some alfalfa meal decompounded by papain was getted.
