Abstract
Rheological properties of wheat starch were studied, relationships between starch viscosity and shearing velocity, temperature and concentration of wheat starch solution were explored. The results indicated that wheat starch paste was typical pseudoplastic fluid, and its rheological model can be described by exponential function. If viscosity was represented by y, and shearing velocity by x, the rheoloeical model of wheat starch used in our study was y=1319.5x-0.4l44,and R2 = 0.9735
